Baked Chicken
Chicken Drumsticks Recipe
Ingredients:
- 8+ chicken drumsticks (brined in salt water to increase juicyness)
- 2 cups breadcrumbs w/Italian seasoning
- 1/2 teaspoon chili powder
- 1/4 teaspoon paprika
- 2 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon onion powder
- 2 teaspoon garlic powder
- 1 teaspoon Dried Mustard
- 1 teaspoon Rosemary
- 1/4 teaspoon Thyme (or less than 1/4 tspn)
- 4+ eggs (or box of egg whites) that will be blended with spices for flavor
- 2 tablespoons vegetable oil or spray oil for pan or wired wrack.
Instructions:
1. Brine the Chicken to add moisture & make chicken juicy:
- Put chicken in bowl of salt water for 90+ minutes.
2. Prepare the Seasoned Breadcrumbs:
- In a large bowl, put the breadcrumbs
3. Prepare the Egg Wash:
- In a separate bowl, beat the eggs with all spices for flavor until smooth let sit for 1 hour.
4. Preheat the Oven:
- Preheat your oven to 400°F (200°C) with wire rack (don't use a baking pan).
5. Coat the Chicken:
- Pat the chicken drumsticks dry with paper towels (water doesn't go well with eggs).
- Dip each drumstick first into the beaten eggs (already blended with spices), making sure it is fully coated.
- Then, roll the drumstick in the seasoned breadcrumb mixture, pressing lightly to ensure the breadcrumbs adhere well.
6. Arrange on a Baking Sheet:
- Place a wire rack on a baking sheet and lightly grease it with vegetable oil to prevent sticking.
- Arrange the coated drumsticks on the wire rack, ensuring they are not touching each other.
7. Bake the Chicken:
- Bake in the preheated oven for 35-40 minutes, or until the drumsticks are golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Turn the drumsticks halfway through the baking time to ensure even cooking.
- Lightly brush or spray the drumsticks with vegetable oil to help with browning (optional).
